Hunanese Chopped Chilis

Duojiao (剁椒) is a Hunanese ingredient made from salted, chopped chili peppers. As far as I know it should be slightly lacto-fermented, but the brands I buy in the US (usually “tantan xiang”) seem to have very little sourness.
